Pip’s Chicken
My bez Pippa made this for me years ago, the same night I also first saw Zoolander. GOOD NIGHT! It is a great, really simple chicken dish (clue’s in the title there I guess). She’s a much better cook than me so this is my slightly haphazard version of it.
Bunch of mint, chopped
2 garlic cloves crushed (either to a paste or just lightly so you can remove them later if you don’t want it too garlicky)
Salt & pepper
1-2 teaspoons Harissa paste (in all supermarkets promise)
1 big tub of Greek yoghurt
2 chicken breasts (or thighs or whatever as you prefer)
Give this a 3/4 hours to marinade and it’ll taste 100% better.
Preheat oven to 200 degrees / gas mark 6/7. Mix all the ingredients except the chicken together. Put half to one side. Cover the other half with the chicken breasts. Put both dishes in fridge. Turn chicken once or twice to make sure the lovely flavours marinade properly. Take out chicken dish and cook in oven for 20 mins or until cooked, turning once or twice. Serve with the other yoghurt dish slathered over it and a green salad with a simple french dressing and walnuts. Lovely January dish, warming but light.
