The Perfect Summer Lunch

The Perfect Summer Lunch

Bacon, Avocado, Mushroom and tomato salad – absolutely amazing, super easy, and delicious. Looks lovely too, especially if you have a nice big plate to serve it on.

Serves 3-4

3 not too overripe avocados, sliced and chopped, but not too small
punnet of normal mushrooms, thinly sliced
4 rashers of streaky bacon, grilled so crispy and chopped
2-3 tomatoes, chopped & depending on size (optional – don’t want it toooo tomatoey)
pine nuts, toasted in a pan
Salad dressing – oil, lemon juice, dijon mustard, salt & pepper, crush 2 garlic cloves to infuse the oil and remove before tossing.

Put all the ingredients except the pine nuts and dressing in a big platter-style bowl (this one in photo is the one my sister and brother in law brought back from their honeymoon in Capri, isn’t it lovely?)  Mix them gently together with the dressing – don’t bruise the avocado or the mushrooms. Scatter the pine nuts over the top and serve immediately with maybe a platter of salamis or meats. My best friend from Penguin, Lindsey, also makes a mean salad of pink watermelon, feta, mint and toasted sunflower seeds which is also a blinder on a hot day.
